The Ultimate Breakfast Wrap

Call me strange, but when I'm hungry, one of my comfort foods is a couple fried eggs served on a bed of Heinz Maple Style beans and served with a couple slices of toasted and buttered light rye bread. Add a glass of cold milk and, well, it doesn't get much better than that; at least not in my books.

If you've visited this blog before, you'll know that I am a bit of a "Foodie" and love to experiment and create new food concoctions. This morning was one of those days in which I played with that old favourite comfort food of mine and added a new twist to it by converting it into the ultimate breakfast wrap.

I discovered that I still had some spinach tortilla shells in my freezer. Immediately my mind went to some type of breakfast wrap. After thawing one and warming it a little on an oven rack, I set it aside.

Next I chopped some green pepper, onions and mushrooms and sautéed them on a frying pan with a little olive oil. This too I set aside. After heating a can of Heinz Maple Style beans, I put about half a can into a bowl and blended it a little with a hand blender, just enough to give me a paste-like texture.

Next up was the eggs. I scrambled three eggs with a fork and poured the mixture onto an oiled 10" round shallow frying fan. I then immediately allowed the egg mixture to flow to each edge of the pan by tilting the pan a bit in every direction until I had one large 10" round pancake-shapped egg to work with. I sprinkled a little salt and black pepper, and a fair bit of crushed red pepper to add some heat. After flipping the egg once, it too was set aside.

Finally came the assembly. I began by spreading my bean paste all over the tortilla shell. I then sprinkled my sautéed green peppers, onions, and mushrooms evenly over the beans. Next up came an even sprinkling of freshly grated Armstrong Old Cheddar. Finally I laid my egg on top. All this was carefully rolled up, tucking the edges in while rolling, to create the ultimate breakfast wrap.

Cut it in half as pictured above, and it will easily serve two. I must say, it was yummy!
